Southwest Chicken Enchilada Soup

Ingredients:
2 tsp olive oil
1/2 cup chopped onion
2 garlic cloves
3 cups Veggie Broth
1 8oz can low sodium tomato sauce
1/8 cup cilantro (i use the tubed kind and just squeezed a little)
1 15oz can no salt added black beans
1 14oz can diced tomatoes (italian blend)
2 cups frozen corn kernals (i did not add these to mine)
1 tsp cumin
1/2 tsp ground oregano
2 organic chicken breasts
Cheese

Directions: Place all ingredients except cheese into a crock pot on High for 4-5 hours or on Low for 8. Once placed in bowl, garnish with just a little cheese (I used my blue 21 Day Fix container for measurements)

For you 21 Day Fixers out there: I was able to get 4-5 good size bowls of soup out of this.
1 Teaspoon
2 Green
1 Yellow
1 Red
1 Blue (if garnished with cheese)
