(1 Green, 1 Yellow, 1 Red)
Spray cooking spray in a frying pan (I use Bertolli Olive Oil Spray found at meijer-see pic below)
Stir Fry carrots, celery, cauliflower (use Green container for measurements) if you don't have containers you will use 1/2c-3/4c total veggies. Stir constantly until tender. Once tender, push these to the side of the pan. I spray a tad more Olive Oil and scramble my 2 eggs on that side of the pan.
In a pan, cook brown rice (1 serving or 1 Yellow Container full)
Once all is cooked, I mixed the veggies and eggs with the rice and add the 21 Day Fix All Purpose Seasoning.

21 Day Fix Fried Rice

Asian Stir Fry
1 Tbsp Coconut Oil
2 Cloves Garlic
1 Tbsp Grated Ginger
1/2 medium carrot, cut into slices
1/2c Broccoli Florets
1/4 medium red bell pepper, sliced
1 small head Bok Choy, chopped into chunks
1.5 Tsp Sesame Oil
Braggs Liquid Aminos (to taste)
Heat coconut oil in large skillet over high heat. Add garlic, ginger, and carrot; cook, stirring constantly for 1 minute. Add broccoli; cook, stirring frequently, for 4-5 minutes. Add bell pepper and bok choy. Reduce heat to medium. Cook 2-3 minutes or until tender-crisp. Turn off heat. Add sesame oil and Bragg Liquid Aminos. Mix well.
This is so good over Fried Rice and some cubed grilled chicken!

Mixed Veggie Stir Fry
(Makes 1 Serving) Also 1 Green Container for you Fixers!
1 Tsp. Olive Oil
1/4c Chopped Asparagus Spears (or Frozen Asparagus cuts)
1/4c Chopped Red Pepper
1/4c Chopped Carrots
1/4c Chopped Onion
1/2 Tsp. Mediterranean Seasoning or All Purpose Seasoning
Directions:
Heat oil in skillet over medium heat.
Combine asparagus, pepper, carrots, onions, and Seasoning
Cook veggies in skillet, mixing frequently for 2-3 minutes or until crisp tender
** Want an extra kick? Add finely chopped fresh ginger for additional flavor!!!!
These veggies are so yummy. I pair them sometimes with meals, and quite often just for an afternoon snack. If I make a big batch for my family at night, I will typically add in an extra serving for snack the next day. Because these are not coated in sauces and oils, they are NOT soggy the next day which is a plus. If I am feeling real good that day, I will add a spray or two of Braggs Liquid Aminos.

Blueberry Cobbler Quick Oats
I typically follow the 21 Day Fix Nutrition Plan and Container System, therefore my measuring is done for me. However, since you may or may not have these containers I will list both for you!
Recipe:
1/2c Gluten Free Quick Oats (1 Yellow Container) (I am GF, so regular Quick Oats are fine if you aren't)
1/4c frozen or fresh blueberries (1/4 Purple Container)
1 Tsp PURE Maple Syrup (1 Tsp)
Directions: Put your Quick Oats in a bowl with water. Microwave for 45 seconds. Add blueberries- microwave for 1 min (if frozen). Add Maple Syrup.
If counting Calories:
Total Calorie count~233. This is a perfect meal that is warm and filling for winter months.
