Qdoba Bowl

1/2c Brown Rice
1/4c black beans (rinsed)
3oz Boneless Skinless Chicken (cooked)
1/2c Salsa
1/4 Avocado
1/8c mozzarella cheese
Dollup of plain Greek yogurt (sour cream substitute)

Cook rice as directed. Rinse black beans. I always have cooked chicken on hand (usually on Sunday I cook quite a bit in the crockpot so it only needs to be heated for recipes). Add salsa, avocado, cheese, and yogurt (if desired)

You save about 350 calories on this bowl vs Qdoba.... you're welcome :D

Fixers: 1.5 yellows, 1.5 Reds, 1/2 Purple, 1.5 Blues

Pizza Zucchini Boats

4 large zucchini
1/2c Mozzarella Cheese
1c Organic Tomato Sauce
Toppings of choosing

Cut each zucchini in half long ways. Take a spoon and gently run down the middle scooping out the center. The goal is to create a boat like form for the fillings.
Preheat over to 375 degrees
On a lined and greased baking sheet (I use a little olive oil). Place zucchini hollow side up on the baking sheet. Place sauce in bottom of boat. Add cheese on top. Add toppings (my favorite is pepperoni- 3-4)
Bake for 20 minutes or until tender

Fixers (2 boats): 1 Green, 1 Blue, 1/2 Purple, 1/2 Red

Crock Pot Pork Chops

4-6 Pork Chops or Pork Tenderloin
Pacific Organic Chicken Broth
1 Medium Onion
21 Day Fix Smoky Southwestern Seasoning
1/2c Brown Rice

Place Pork in the crockpot. Add Chicken Broth and onion to fill and cover pork chops. Add 4
fingerful dashes of Southwest Seasoning.

Cook on low for 8 hours.

I typically put this on top of rice and add a side of veggies. This is such a good Sunday meal or on nights were super busy and need dinner ready when we get home.

Fixers: 1 Red, 1 Yellow

Peanut Butter & Strawberry Oatmeal

Thumbs Up Breakfast!!!! Besides Shakeology, Oatmeal is my next go to breakfast. In the winter months or when I just want something really warm and filling, this is my go to meal.

What you'll need: (Fixers: 1 Yellow, 1/4 Purple, 1 Tsp)

1/2 cup of quick oats or steel cut oats
1/4 cup of strawberries cubed
1tsp Peanut Butter (2g sugar or less.... PB2 is a great option)

Make oats as directed. Add in peanut butter while hot to mix well..... if using PB2, you may need to add a few drops of water. Add in cut up strawberries!

This is absolutely delicious and the right amount of protein and complex carbs. Start your morning right :)

Ginger Chicken

So I love Chinese food but it is loaded with sodium. Every time I eat it, my fingers swell and I usually feel terrible later, so I set out to make my own yumminess. My husband is really the cook in this family and I don't do very good just coming up with recipes by throwing stuff together but... it worked this time ;)

What you'll need: ( Fix Count: 1 Red, 1 Yellow, 1 Tsp)
Boneless Skinless Chicken Breast or Tenderloins
3 Tbsp EVOO
3 Tsp Fresh Ginger
Powdered Ginger (optional)
Brown Rice
Braggs Liquid Aminos (optional)

First I heated the Extra Virgin OIive Oil and fresh Ginger in a pan on low heat, just until the Ginger mixed in a little. I placed my thawed Chicken Breasts in a non stick 9x13 pan. I added a little Organic Low Sodium Chicken Broth (found at Meijer-Pacific brand) in the bottom of the pan so the ginger wouldn't burn. I then slathered the ginger mix over the chicken breasts and poured left over mixture in the bottom of the pan. I also sprinkled a little ginger powder on the top of the chicken.

Bake at 400 degrees for 55 minutes (at 20 minutes I started checking every 10 min to make sure they weren't burning) I do believe these took much longer because the chicken was very thick. After the chicken was cooked fully, I measured the chicken in my protein Fix container. I made a side of brown rice while the chicken was baking and measured that in my carb Fix container. (I do leave the fat on the chicken for flavor and trim off before eating)

Now I have to say a few things..... I know the containers look small, but they are actually a very full serving. I made my bowl and put it in the fridge to eat after my Fit Club. My husband thought the bowl was for him so he ate that and was full after eating it..... the guy usually eats like a horse so.... believe me when I say it will fill your belly up. I personally will spray a little Braggs Liquid Aminos for the brown rice but its not needed. I usually use a spray or 2.

Lastly, I am definitely going to try this in the crockpot next time. That way it can cook all day while I am at work and make it alot faster! You could scramble some egg whites, and green onion or pepper to throw in and make it more of a fried rice type too! Or sautee some Bok Choy in olive oil or ginger to make it more Asian Cuisine! The extras are endless :)

21 Day Fix Fried Rice

(1 Green, 1 Yellow, 1 Red)

Spray cooking spray in a frying pan (I use Bertolli  Olive Oil Spray found at meijer-see pic below)

Stir Fry carrots, celery, cauliflower (use Green container for measurements) if you don't have containers you will use 1/2c-3/4c total veggies. Stir constantly until tender. Once tender, push these to the side of the pan. I spray a tad more Olive Oil and scramble my 2 eggs on that side of the pan.

In a pan, cook brown rice (1 serving or 1 Yellow Container full)

Once all is cooked, I mixed the veggies and eggs with the rice and add the 21 Day Fix All Purpose Seasoning.

Stir and enjoy :D

Asian Stir Fry

1 Tbsp Coconut Oil
2 Cloves Garlic
1 Tbsp Grated Ginger
1/2 medium carrot, cut into slices
1/2c Broccoli Florets
1/4 medium red bell pepper, sliced
1 small head Bok Choy, chopped into chunks
1.5 Tsp Sesame Oil
Braggs Liquid Aminos (to taste)

Heat coconut oil in large skillet over high heat. Add garlic, ginger, and carrot; cook, stirring constantly for 1 minute. Add broccoli; cook, stirring frequently, for 4-5 minutes. Add bell pepper and bok choy. Reduce heat to medium. Cook 2-3 minutes or until tender-crisp. Turn off heat. Add sesame oil and Bragg Liquid Aminos. Mix well.

This is so good over Fried Rice and some cubed grilled chicken!

Fixers: 1 Tsp, 1 Green

These veggies are so yummy. I pair them sometimes with meals, and quite often just for an afternoon snack. If I make a big batch for my family at night, I will typically add in an extra serving for snack the next day.
