Carley's 21 Day Fix Journey

My Goal for 2015 was ABS. As most of you know, last year after losing 32lbs with T25 and Shakeology I hit a major plateau. I continued to TRUST the process and never give up. 6 months later I was diagnosed with major food allergies (most that I kind of knew about~but ignored b/c I had never been actually tested). I learned ALOT about my body, food, and mostly how to listen to my body. I went to a holistic doctor by choice, and did a lot of studying. I chose to try the Autoimmune Paleo food plan, and I am never looking back. I had trials over those months, b/c as a health and fitness coach I felt like I was ALWAYS being looked at. I second guessed myself a lot and realized that by going through this. I learned 10x more about nutrition and listening to my body, than I would have ever learned had I not had this go on. I believe that by going through this, I can better help others. Just this month, my Doctor gave me the ok to try something other than Yoga and light workouts :D He was extremely happy with my progress and how my body has responded so far. So am I.

Once I felt comfortable with changing my palate (food), and started feeling changes in my body, I was ready to introduce the 21 Day Fix and get those ABS. Click Here for more info on the Fix. Below are my fun food containers. I don't have to count calories, its already done for me. I simply plan my meals and use my count of containers accordingly. Its super simple!



Most people look at these containers and think they are going to starve! They are misleading. You get several containers per day that you can make meals with. To the right here, you have 1 Yellow, 1 Green, 1 Red~ and one awesome Chicken Stir Fry! There are a ton of recipes at your exposure, so most of the thinking is done for you (insert ecstatic emoji) Some days, I find it hard to eat all my containers.


I wish I would have gotten a pic on the same side (I'll make sure to remember that next week) but this is a difference of 5 days. My stomach looks more toned already!!! Between all the food I get to eat plus one Shakeology a day, I never feel hungry. I set myself up for success by planning and prepping my food so that I don't FAIL. I get 3 extra yellow containers for chocolate or a treat each week, and 3 extra yellow containers for wine each week. This plan is Tha Bomb Diggity!!!









 
I am super excited about  this program and cant wait to see my results after 21 days!! Its not always about measuring your successes on the scale. I can visibly see the difference and sometimes a picture is worth a thousand words!

Valentines Day Special

Valentines Day is right around the corner. There are always treats laying around and chocolates being given. I tell my hubby every year NOT to buy me flowers or chocolates, if he wants to buy me a bouquet~Edible Arrangements will do :)

Southwest Chicken Enchilada Soup

Ingredients:
2 tsp olive oil
1/2 cup chopped onion
2 garlic cloves
3 cups Veggie Broth
1 8oz can low sodium tomato sauce
1/8 cup cilantro (i use the tubed kind and just squeezed a little)
1 15oz can no salt added black beans
1 14oz can diced tomatoes (italian blend)
2 cups frozen corn kernals (i did not add these to mine)
1 tsp cumin
1/2 tsp ground oregano
2 organic chicken breasts
Cheese

Directions: Place all ingredients except cheese into a crock pot on High for 4-5 hours or on Low for 8. Once placed in bowl, garnish with just a little cheese (I used my blue 21 Day Fix container for measurements)

For you 21 Day Fixers out there: I was able to get 4-5 good size bowls of soup out of this.

1 Red
1 Blue (if garnished with cheese)

Pittsburgh- Super Friday

My Trip to Pittsburgh Pennsylvania

Well, to say this trip started off with a bang, is no joke. The night before we were supposed to leave, Michigan decided to hand us 12 in of snow in about 6 hours. Luckily, we took the back way to the Toll Roads and missed the 195 car pile up. We started out slow (about 30mph) but luckily part way through Ohio, we were smooth sailing with sun and clear roads. We made it in about 5.5 hours :)


We were pretty excited that we made good time b/c we now would have time to get ready for Super Friday,  but..... if you know me I was kind of wanting a new shirt so we googled Maurices.... and in Pittsburgh~those are barbershops (we didn't know that until we got there). So we got completely derailed downtown :/ and my fun adventure to find a shirt turned into 1 hours worth of trying to find our way back to the hotel. Woops :D Needless to say, we dropped our luggage and had to fly to the Event! It was a white out theme (fitting for the weather) and we got pretty good seats on the balcony.

One of the most amazing things that always inspires me at these Events, is listening to the transformation stories. People probably think that its just weight and body transformations. While there are tons of those, most of those same stories are also Life Transformations. The way our world is today, to be involved in a Company and environment full of positive, inviting, non-judgmental individuals is pretty inspiring in itself. 


One of the main reasons I drove to Pennsylvania for this event was the CEO Carl Daikeler and the Creator of the 21 Day Fix Autumn Calabrese were going to be there in person. To hear Carl talk about the thousands of lives changed by not only these programs but the effect Coaching has on others success is what keeps me going in this business. My main goal when I started this was if I could help 1 person change their life, like mine has been changed through this company.... it's all worth it.

It's probably a good thing I like this lady, because our "double" bed was really half way b/w a twin and double. If we weren't close before, we definitely were after sharing a bed ;)

On Saturday, there was a Dream Team Live Event where some of the top coaches (#1 team in the company) presented several different topics on how to become better leaders, and better help people commit to a healthier lifestyle. I was able to meet some of them Saturday night and thank them personally for the inspiration.

If you know me well, I am a complete extrovert. I like to put myself out there, especially if it will make someone else feel better. I HAD to get my pictures taken with Deidra and Marlena b/c I am drawn to their personalities. I also am a complete TOMBOY, so to get all dolled up was completely out of my comfort zone. I am so glad that I had Kelli with me to pull me out of my shell and make me get fancy :) It does not happen often, and I am so thankful for my girlfriends that I have made. 



Saturday night at Perle we mingled with others from our Team and over 200 other coaches. 


And to top off my night, I was able to meet Melanie Mitro-Top Coach of 2014 and one of my Upline Coaches. She is as beautiful on the inside, and she is out. I could consider my trip complete after meeting her!!!!

What a BLAST!!!! I can not wait until April, to see what is in store for the next event. 

This is just one of the amazing experiences that I have been blessed with through Beachbody. My job is not to "sell" somebody something and call it good. I am here for each person EVERY STEP OF THE WAY! 
I do not believe one door closes without another one opening. In my darkest hour, when I didn't understand why, my light was directed here. I had no clue at that time, that this is the road I would be lead down. I can honestly say that I was able to start helping myself, when I started helping others. And there is no better Reward than that. I am a happier Woman, a better Wife, a playful in-tune Mother, a more Positive, Confidant human being..... and way too many people think this is just a workout DVD :)

21 Day Fix Fried Rice

(1 Green, 1 Yellow, 1 Red)

Spray cooking spray in a frying pan (I use Bertolli  Olive Oil Spray found at meijer-see pic below)

Stir Fry carrots, celery, cauliflower (use Green container for measurements) if you don't have containers you will use 1/2c-3/4c total veggies. Stir constantly until tender. Once tender, push these to the side of the pan. I spray a tad more Olive Oil and scramble my 2 eggs on that side of the pan.

In a pan, cook brown rice (1 serving or 1 Yellow Container full)

Once all is cooked, I mixed the veggies and eggs with the rice and add the 21 Day Fix All Purpose Seasoning

Stir and enjoy :D


Asian Stir Fry

1 Tbsp Coconut Oil
2 Cloves Garlic
1 Tbsp Grated Ginger
1/2 medium carrot, cut into slices
1/2c Broccoli Florets
1/4 medium red bell pepper, sliced
1 small head Bok Choy, chopped into chunks
1.5 Tsp Sesame Oil
Braggs Liquid Aminos (to taste)

Heat coconut oil in large skillet over high heat. Add garlic, ginger, and carrot; cook, stirring constantly for 1 minute. Add broccoli; cook, stirring frequently, for 4-5 minutes. Add bell pepper and bok choy. Reduce heat to medium. Cook 2-3 minutes or until tender-crisp. Turn off heat. Add sesame oil and Bragg Liquid Aminos. Mix well.

This is so good over Fried Rice and some cubed grilled chicken!

Mixed Veggie Stir Fry

(Makes 1 Serving) Also 1 Green Container for you Fixers!

1 Tsp. Olive Oil
1/4c Chopped Asparagus Spears (or Frozen Asparagus cuts)
1/4c Chopped Red Pepper
1/4c Chopped Carrots
1/4c Chopped Onion
1/2 Tsp. Mediterranean Seasoning or All Purpose Seasoning

Directions:

Heat oil in skillet over medium heat.

Combine asparagus, pepper, carrots, onions, and Seasoning

Cook veggies in skillet, mixing frequently for 2-3 minutes or until crisp tender

** Want an extra kick? Add finely chopped fresh ginger for additional flavor!!!!


These veggies are so yummy. I pair them sometimes with meals, and quite often just for an afternoon snack. If I make a big batch for my family at night, I will typically add in an extra serving for snack the next day. Because these are not coated in sauces and oils, they are NOT soggy the next day which is a plus. If I am feeling real good that day, I will add a spray or two of Braggs Liquid Aminos.

Mediterranean Seasoning

4 Tbsp. Dried Parley, crushed
4 Tsp. Dried Onion Flakes
2 Tsp. Dried Basil, crushed
1 Tsp. Ground Oregano
1 Tsp. Ground Thyme
1 Tsp. Garlic Powder
1 Tsp. Sea Salt
1/4 Tsp. Ground Black Pepper





This is a FREE Seasoning on the 21 Day Fix Program. Season as you wish :) 

Kickin Smokey Southwestern Low Sodium Seasoning

1 Tbsp. Chili Powder
2 tsp. Ground Cumin
1 tsp. Coriander
1/2 tsp. Onion Powder
1/2 tsp. Garlic Powder
1/2 tsp. Dried Oregano
1/2 tsp. Smoked Paprika
1 tsp. Sea Salt

Mix together in a Bowl. Seal in an air tight container and this will last for a few weeks. So good for that extra kick!




This is a FREE Seasoning on the 21 Day Fix  Program. Season as you wish :) 

All Purpose Seasoning

4 tsp. onion powder
2 tsp. garlic powder
2 tsp. mustard powder
1/4 tsp. dried thyme
1/4 tsp. ground black pepper
1 tsp sea salt


Mix all together in a small bowl. Seal in an airtight container and this will last for a few weeks.



This seasoning is FREE on the 21 Day Fix  Program. Season as you wish :) 

Blueberry Cobbler Quick Oats

I typically follow the 21 Day Fix Nutrition Plan and Container System, therefore my measuring is done for me. However, since you may or may not have these containers I will list both for you!


Recipe:

1/2c Gluten Free Quick Oats (1 Yellow Container) (I am GF, so regular Quick Oats are fine if you aren't)

1/4c frozen or fresh blueberries (1/4 Purple Container)

1 Tsp PURE Maple Syrup (1 Tsp)


Directions: Put your Quick Oats in a bowl with water. Microwave for 45 seconds. Add blueberries- microwave for 1 min (if frozen). Add Maple Syrup.

If counting Calories:

Total Calorie count~233. This is a perfect meal that is warm and filling for winter months.
